I love doing the Carnivore Diet Success Stories, I find it very rewarding to share peoples progress. So I am going to try to catch up with people once a year to see how they are getting on.
Will they all still be Carnivore, probably not. However, I believe they will have an appreciation of the benefits of a meat-heavy diet and will use that knowledge as a tool to further their health.
Meat up with Mark
1) How would you currently describe your current way of eating?
Not much has changed in the last year outside of a few N=1 Self Experiments. Since going 100% Carnivore on 1/1/2018 (NOTE: I was HyperCarnivore since 2014). I’ve tweaked a few things. I cannot do any spices at all even pepper. I only use salt. Pretty much high fat ribeyes & ground beef are the bulk of my eating. I get my ribeyes for around $3.99 per pound or less. We raise chickens on our farm & have all the eggs we could ever need. I eat lots of eggs up to 18 or more per day on some days. Most days I will eat around 2 pounds of ribeyes & 6 to 9 eggs. I generally eat OMAD. My motto is non-dogmatic……”I eat when hungry; I eat until totally full; I do not eat again until I’m hungry again.” I may not eat again after a meal for 18 hours, 26 hours or 72 hours. I let it occur organically not forced or dictated by a clock. Normally I eat around every 24 hours. Midweek because of long days of training clients, up to 18 clients plus per day, plus evening church youth activities I may not eat for 48 or more hours. I’m so busy I seem to almost never have any hunger signalling. Most will notice they have more hunger/cravings when they are not busy. They really are more bored than hungry. I like simple & I know what works well for myself and I do not deviate much from it. I will occasionally eat some pork, usually carnivore candy i.e. bacon. Sometimes I eat fish, seafood & a very little amount of dark meat from chicken. We mix our deer meat into our ground beef along with pork fat. I eat very, very little dairy in the form of Swiss cheese. I do use lots of butter. I love Beef Liver and try to eat it once per week. I use Redmond’s Real Salt & Pink Himalayan Salt. Beef & eggs are probably 95% of my total food. I eat my steaks rare to raw even.
2) What have you learned regarding nutrition over the last year?
Well for one thing I do the absolute best at keeping my Fat macros around 70% & the rest protein. For two months from October 1st to December 2nd I did an N=1 Self Experiment of going much higher in protein. I was doing a minimum of 50% protein to as high of 70% and the rest fat. I felt absolutely horrible!!! I started experiencing hunger often. I was Hangry even!!! I started developing cold sores inside my nose all the time. Aches, pains & joints issues got worse. Sleep, calmness & sense of well-being greatly declined. Dry eyes returned too. I was glad to end this experiment & to get back to where I was.
3) What health & Fitness improvements, and/or setbacks have you experienced in the last year?
Pretty much all is the same as it was last year except for a two month decline with my high protein experiment.
4) What are your health and fitness goals in the year ahead?
To keep increasing my ‘Physiological Headspace’ as Arthur De Vany calls it. I want to keep increasing my Healthspan through proper eating, proper training & proper rest/recovery/relaxation/fun/happiness. As I’m a turning 51 in March I want to keep upping my game to be as much above the curve as I can be. I refuse to not to try to keep improving each day. If you rest on your laurels or try just to maintain you will regress. You must keep pushing onward & upward.

If you are considering going carnivore do your own research. It is a big change & you are responsible for your own well-being not me, not Shawn Baker, not Paul Saladino, not Nevada Gray, not Brett Lloyd or anyone else. IT IS YOUR RESPONSIBILITY & YOURS ALONE!!! Take ownership of your health & that of your immediate family that you are in charge of. Many of us are here to help but you should be the boss of your body.
