1) Introduce Yourself.

 
My name is Jay Horley. I’ve been a type 1 diabetic since the age of 14, 16 years now. My story basically is that of someone who struggled with achieving peak athletic performance and my health slowly declined to the point where I was depressed, had more than 12 nutrient deficiencies, an intestinal bacterial overgrowth which eventually led to an intestinal infection.  
 

2) How did you eat before Carnivore.

 
In my late teens and early 20’s I was on a standard American diet with regular takeaway ‘junk food’ at this point I was taking an obscene amount of insulin/medication to cover the gross amount of processed food I ate. As I got more and more health-conscious my diet slowly transitioned to fruit and vegetable-heavy paleo diet. Because everyone says they’re healthy right? 
 

3) Why did you try Carnivore to begin with.

 
Mid-2018 my health hit rock bottom. My doctor had diagnosed with all of the above conditions and said clearly I was on the path to intestinal cancer. I began searching for answers because I thought I was doing everything right. It started with Low Fodmap and removing nightshades, I stuck with this approach for about 6 months but I had already done too much damage and it did very little for me in the long run. Then I found a solution, a friend of mine introduced me to a couple of Carnivore Resources, one, in particular, was ‘The Hypercarnivore Diet by Don Matez’ – This book instantly blew my mind and I immediately removed every piece of plant product I had in my house. 
 
Luckily or coincidentally as I finished that bookShawn Baker was popularising World Carnivore Month. I jumped in 100% – I announced to social media I was going to eat 4 steaks a day for 31 days in a row, 124 steaks straight and I filmed all of them in my Instagram stories for accountability. 
 

4) How do you personally approach the Carnivore Diet.

 
Initially, it was ribeye & strip loin steaks only. That lasted a few months or so. Over the last 10-11 months, I’ve tried various meats, chicken, salmon, lamb etc. But I always come back to a majority of beef and the fattiest cuts I can find such as short rib. 5) What benefits have you seen since starting the Carnivore Diet.

 
A complete overhaul in my health and happiness. Straight up I’m no longer depressed, sick or injured. From a doctor’s point of view my blood tests have all dramatically improved, my infection and nutritional deficiencies have all disappeared. Personally, I can actually breathe through my nose again, my digestion has improved massively no more bloating and passing stool is easy. 
 
Outside of my own health, I’ve been fortunate to connect with so many other carnivore people and type 1 diabetics who have reached out to me. 
 

6) What negatives have you found with the Carnivore Diet.

 
Only the ones I create for myself, I get annoyed at vegan propaganda and people telling me how bad my diet is going to be for me. However, I’ve learned to stop getting into social media arguments and let my results do the talking. 
 

7) Do you exercise on the Carnivore Diet, if so how do you find it and what do you do.

 
Yes, 6 days a week usually with a mix of Resistance Training, Brazilian Jiu-Jitsu and some other outdoor activities. Training is amazing! However, previously I 12+ nutrient deficiencies so just plugging those is going to increase performance, but from a type on diabetic point of view blood sugar is significantly more stable. 
 

8) What piece of advice would you give someone who is interested in trying this diet, but hasn’t taken the leap yet.

 
What’s the worst that can happen in 30-90 days? If you are curious then something isn’t going right for you or you wouldn’t need to think about any other diet out there. Find an accountability buddy and do it, your future self with thank you for it. 
 

9) Do you think Carnivore will ever be accepted as a mainstream diet.

 
Yes, but it will take time. There is too much money and big food companies for a top-down approach, everyone needs to support each other at the bottom and reach out to your doctors and tell them the benefits you’ve had on this way of eating.
