Interview with Kelly

1) Introduce Yourself.

Hey guys! My name is Kelly and I am a Primal Health Coach from Pennsylvania. I also work in the medical field for a living. Watching the system fail patients and push medicine while changing my health with only food has created a passion to help others heal and feel their personal best! Given my own struggles along the way I’ve spent years researching and trying N+1 experiments. For me the lifestyle matters just as much as the food. I also have a herd of littles so I understand the complexity of bringing a new lifestyle to the whole family! I love to travel and do anything involving the outdoors!

2) How did you eat before Carnivore.

Before Carnivore I was eating pretty much a veggie dense Keto diet.  (Even though I started with a very heavily meat based Keto diet in 2013 that healed my Metabolic Disease.)

3) Why did you try Carnivore to begin with.

My health was taking a bad turn. I started having severe bloating and constipation. Pain in my illeocecal valve area. I had gained about 15lbs. My face would get hives near my cycle, indicating a hormone imbalance. Food sensitivities seemed to increase. My immune system was surpressed. Neuropathy. I was just miserable. Meat was all I could tolerate to function and is honestly my favorite foods to eat so I just kept eating that way. I was also lucky enough to get some unusual labs back on an in-depth cholesterol panel to confirm part of the problem. I was considered a hyper-absorber. After research I figured so much out! I had previously done genetic testing and knew that I have no family genetic cholesterol issue. (It’s actually pretty rare, when it does exist it’s know to kill people between the ages of 30 to 50.)  I had these same labs drawn back in 2013 also and wasn’t an absorber then. What changed? My gut health and the copious amounts of veggies I ate. Turns out cholesterol markers like campesterol and sitosterol indicate hyper-absorbtion, which means veggie cholesterols were not being eliminated in my bowels but being absorbed where they don’t belong into my bloodstream!!! If something doesn’t belong in your blood stream your immune system kicks in. My gut had been destroyed and veggies were making it worse!

4) How do you personally approach the Carnivore Diet.

I use a nose to tail approach. I include organ meats, mussels, salmon roe, and cod livers on the regular, in addition to my steaks, burgers/ground beef, pastured bacon and duck eggs. Dairy is very minimal and if I do I try to stick to raw goat’s milk versions of cheese, or cream. I really try to get a nice variety. I eat about twice a day. 10 and 2. I’m still drinking one cup or organic coffee in the am, with collagen and an egg yolk at times. Everything gets pink salt, but I also take some Electrolytes from LMNT because they help quench my thirst. I will say this is a lifestyle for me. I always get outside a few times daily for the benefits of the sun and grounding, I detox, try for optimal sleep and stay active. Unfortunately you can’t workout your way out of a bad diet, and you can’t eat healthy and expect it to make up for a bad lifestyle.

5) What benefits have you seen since starting the Carnivore Diet.

Simplicity! Satisfying! Cheap!  Symptoms improving or gone! The boating and pain is gone, my bowel movements are regular. Hives have stopped occuring most of the time. The immune system is stable. I will say there was some underlying infections present that I found through doing some testing that I treated with antimicrobials. However, I wouldn’t have been able to function daily without carnivore during the healing. I think this is really important to share. Carnivore does wonders and I believe is the optimal diet coded for humans, however I still wasn’t 100% (high cholesterol for me, (250 was my norm, I was up to 450 and dense small particles), weight, nutrient deficiencies even eating the foods with them, ex zinc). If you are still struggling in some areas you should dig deeper. This is an important message I’d love to get out in our community. Because if you have a gut infection or mold/metal toxicity and your functional you may decide your life is liveable and miss the signs. Down the road you can have organs that get destroyed, auto-immune issues, or even heart disease. Not from meat but from ignoring symptoms. There is more than one way to get disease.

6) What negatives have you found with the Carnivore Diet.

Other than some negativity from those that don’t bother to listen with the intent to understand. Nothing. I’m eating my favorite foods and I feel amazing!

7) Do you exercise on the Carnivore Diet, if so how do you find it and what do you do.

Currently I do not do what I’d like to be.. It was too much of a stressor lifting weights on my immune system. My stress bucket was too full. So I walk. Which if you can’t do anything else walking is the best thing for you. I also do yoga. However now that I’m feeling better I will be adding weight training 3x week soon!

8) What piece of advice would you give someone who is interested in trying this diet, but hasn’t taken the leap yet.

Do it!!  Remember it’s ok to change over slow or at your own pace. Small changes still benefit you. It’s ok to make mistakes. Don’t beat yourself up. Remind yourself of your goals and what reaching them will feel like if it gets tough. Reach out to the tribe, I really find this whole community supportive, friendly and helpful. Also try new foods. You may be surprised what you like and how much variety there can be with this woe. Beef tongue is amazing. Looks terrible. Tastes like a moist fatty pot roast only no chunks of fat! I personally think Snake Juice or Electrolytes helps with transitioning too. I don’t worry about macros. I eat when hungry. Some do better with high fat, some lean, I naturally have days of each, do what makes you feel best. Simple is so satisfying.

9) Do you think Carnivore will ever be accepted as a mainstream diet.

Hopefully!! I think the more we tell the world, and people get tired of feeling sick, they will get brave enough to try and they won’t be able to go back either!
