Meat Up: 1 year later with Ævar

I love doing the Carnivore Diet Success Stories, I find it very rewarding to share peoples progress. So I am going to try to catch up with people once a year to see how they are getting on.

Will they all still be Carnivore, probably not. However, I believe they will have an appreciation of the benefits of a meat-heavy diet and will use that knowledge as a tool to further their health.

How would you currently describe your current way of eating.

I follow a carnivore diet. What I usually eat is beef and lamb. I’d say more than 98% but I have incorporated some horse meat lately. Working to find the best cuts of horse. Though I might add that occasionally I have eaten sides with my meat. That happens when I visit my mom for example. I don’t want to trouble her with my “special needs” so I eat a little of what she puts on the table. That’s maybe 2 or 3 meals a year.

What have you learned regarding nutrition over the last year.

When nutrition is on the table you’re constantly learning. I can’t really put my finger on specifics but I’ve been experimenting with organ meats a little…mostly lambs liver and lambs heart. I also eat a little cod liver for Vitamin D during winter and lump fish roe as an experiment. My opinion is that I don’t think it’s necessary to eat those but they do have some benefits for me in the long dark Icelandic winter months. So basically that’s what I’ve learned.

What health & Fitness improvements, and/or setbacks have you experienced in the last year.

I have had no setbacks and actually made some improvements in the gym. Still gaining some strength. I also think it’s important that I haven’t lost speed. So at 51 I think that’s’ pretty impressive.

What are your health and fitness goals in the year ahead.

My goals for this year is to deadlift the same weight I did when I was 25. I also plan to ride my bike a lot more next summer. And I want to get a little leaner.

Anything else to add? and where can people follow your journey?

Carnivore diet has changed my life. During these 2 and a half years on this WOE I may have eaten some sides a very few times and it always affects me. Usually I will get bloated and it always messes with my sleep. So I can’t say I recommend this but this is my choice to keep some situations simple.
