Interview with Lindsay
Introduce Yourself.
Hi, I’m Lindsay Wilson. I am a 43 year old mum of 2 children and have been married to my husband Darren for 10 years.
About 3 years ago Darren had a health check which showed him to be pre diabetic and his cholesterol was high, the doctor wanted to put him on statins but he refused and came away with a diet sheet given to him by the nurse.
I was also struggling health wise with digestive issues. I had been on omeprazole for 5 years due to silent reflux and chronic gastritis.
I also suffered with joint pain and had lower back problems.
When I was younger I ate mainly fruit and vegetables, there was never any full fat products in the house, everything I ate was low fat “health” foods.
Although I was always slim I had zero energy and low moods, I suffered with endometriosis and reoccurring ovarian cysts.
When Darren came home with his diet sheet I just knew this wouldn’t make him better so I decided to research it myself and I found Maria Emmerich , Dave Fieldman and a few others who convinced me Keto was something we should try.
Our diet before had not been good and I was totally of the mindset that fat was bad so it took a huge leap of faith.
We both started keto and within a few months Darren had lost over a stone in weight and his glucose numbers were all within normal range, I found my joints were easing and after the initial phase of reintroducing fat my reflux was much better.
The more we followed the diet the better we felt so we knew we were heading in the right direction.
How did you eat before Carnivore.
I had eaten keto for 3 years (with the odd blip) but before that my diet was very high in sugar. I would eat bags and bags of jelly sweets and biscuits and loved cereals as a snack.
Why did you try Carnivore to begin with.
Carnivore seemed a natural progression to be honest. I felt 80% better with keto but felt I wanted to eat more protein as I was becoming more active.
I happened to come across a few people on social media who had adopted a total meat approach and started to read up on some of the benefits they were experiencing.
I slowly began to introduce days of just meat in the week and made less effort to cook lots of sides at meal times.
How do you personally approach the Carnivore Diet.
The one thing I do love about this way of eating is the simplicity but I like to include a broad range of meats.
I eat beef, chicken, pork, lamb, venison, seafood, I make bone broth and eat pigs feet for collagen, I could not give up all dairy and so I include cheese and just recently I have started to drink raw milk.
What benefits have you seen since starting the Carnivore Diet.
There have been lots of benefits even down to my skin and hair looking better but I am no longer on meds for reflux and had an endoscopy which showed no inflammation.
My joint pain is pretty much non existent now and my energy is through the roof so much so I have taken up running !!
Endometriosis pain is so low now I don’t take any pain meds.
One of the biggest changes though has been in my mood, I feel like I get up everyday energised and looking forward to the day ahead.
What negatives have you found with the Carnivore Diet.
I had to really think about any negatives but to be honest I think just the social side of it and trying to convince my doctor that all these wonderful changes in my health are down to my diet!
Do you exercise on the Carnivore Diet, if so how do you find it and what do you do.
Up until recently I didn’t really do much exercise, I rode my horse now and then and would go to the gym for 1 session and give up however now I swim I run and I have just bought some weights to use at home! I feel stronger than I ever have and am actually enjoying being active.
What piece of advice would you give someone who is interested in trying this diet, but hasn’t taken the leap yet.
Just go for it ! It could be life changing.
Do you think Carnivore will ever be accepted as a mainstream diet.
I hope so; I think the more benefits people see the more people will try.
