A Simple Keto Recipe – Pork with Ginger Chinese Sauce

One thing that is exceedingly difficult for me on Keto, is Chinese food. Obviously the takeaways are off limits. However creating homemade Chinese food is a bit of a challenge too. Indian and Thai are much easier to fathom. The fresh ginger and garlic sauce below is an easy alternative. It goes with pretty much any meat, and you can do whatever veg you like on the side.

Ingredients – Serves 2

Diced Pork

For the Sauce:

Fresh Ginger

3 Cloves of Garlic

Olive Oil

Apple Cider Vinegar

Cherry Tomatoes

Onion

Chilli Pepper

Any fresh parsley, coriander or mint you have to hand

Butter for veg & frying meat

Salt and Pepper to taste

Instructions – Prep Time: 5 minutes. Cooking Time: 15 minutes

There are 2 ways of cooking this. The lazy way, is where you cook the sauce ingredients in with the meat. However for the 1st time you should just stir fry the meat separately. As you need two reduce down the sauce, so you need to get an idea of the timing. So it’s best to do it in a different pan.

Cook the pork for 15 minutes on a medium heat, stirring occasionally. The sauce and veg can be prepped and cooked within this time. Put the oil and vinegar into the pan, medium heat. Dice then add to the pan in this order, onion, ginger, chilli, garlic, tomatoes, herbs. Let the sauce cook and reduce. Stir occasionally. Once ready mix in with the cooked meat and serve.

You can do any side veg you want.

Per serving you are looking at around 530 Calories, Carbs 10g (9%), Protein 34g (29%) and Fat 33g (62%).

A Simple Keto Recipe – Chicken Thai Green Curry

I love Thai Curries. I spent a few months travelling around Thailand when I was younger, it is a wonderfully strange place. I tell you what as well, there isn’t many overweight Thai people. Yet their food is really satisfying, fresh and tasty.

Like all good Keto recipes, they can be amended at will. You can make them spicy or mild, and you can add whatever veg you want. I obviously skip the rice, and in this version there are carrots and mangetout. Which are higher carb than some may be able to handle, so just add whatever veg you want.

A great thing about this meal, is my wife can eat the same meal as me. She just has a bit of rice with it. She believes in Keto, but it didn’t suit her. She follows the Perfect Health Diet now, which is also a sensible way of eating.

Ingredients – Serves 2

For the Thai Green Curry Paste

1 Medium Green Chilli

2 Cloves Garlic

1 Lemongrass stick

1 Lime

Fresh Coriander

Tsp Coriander powder

Tsp Cumin powder

For the Curry

4 Chicken Thighs – £2

1 tbs Coconut Oil – 20p

1 Can of Coconut Milk – £1

2 tbs Fish Sauce – 20p

1 Carrot – 5p

100g Mangetout – £1

Instructions – Prep Time: 10 minutes. Cooking Time: 20 minutes minimum

Take the ingredients for the paste. Cut the lime in half and squeeze the juice into a mini food processor/blender. Chop the remaining paste ingredients and add to the blender. Blitz it into a paste. Add a bit of water if needed.

Take your wok (or equivalent), heat the coconut oil. Then add the paste, then coconut milk, fish sauce, and the chicken. Bring it to the boil, then simmer until the chicken is cooked.  Depending on how much time you have, depends on what you do with the chicken. If you have a while, put the thighs in whole and simmer on a low heat for longer. If you have less time, dice the chicken and cook on a higher heat.

Use whatever veg you like, in any way you like. I prefer just to cook the veg in the sauce with everything else. I think harder veg goes better in these curries, like peppers, carrots and mangetout etc; but really put in whatever fits your version of Keto.

The full meal per serving; you are looking at around 700 Calories, Total Carbs 15g (10%), Protein 38g (22%) and Fat 53g (68%). These figures are taken from MyFitnessPal, so you could argue the figures up and down a bit but you get my point.

Quad Lock Run Kit and Poncho Review

Quad Lock kindly provided me with the product to test, but they have had no input into the review.

Who are Quad Lock

They are a company who specialise in a smartphone mounting system for running, cycling and driving in your car. You put your phone in their phone case, and that enables you to attach it to the relevant activity mounting system.

What did they send me

They sent me the iPhone 6/6s RUN KIT and the iPhone 6/6s Poncho.

I have been looking for a good phone holding arm band for a while. I do not have a GPS watch, so I track my runs and pace using the Stava app on my phone.

In the run kit you get the arm band which is made from Nylon Lycra, and the phone case. The phone case is the selling point. On the back of the case is a click/locking system, which corresponds to an attachment on the arm band. The poncho is basically a waterproof jacket for the front of your phone, which I need as I don’t have a fancy waterproof phone.

Arrival

Once I put my order in, it arrived in a good time. It came in a nice box with instructions, not that you really need them. Nothing special to report, just as you would expect from any standard online shopping order.

Style and Fit

The arm band is black with blue trim, it looks well made and is sturdy. It has a bit of tension in the strap when you wrap it around your arm. The Velcro also seems strong and sturdy. Once you attach it you your arm it stays there, which is important as iPhones are relatively heavy. The case is black with a stamped logo on the back. My phone fits into the case well, just like any decent phone case you would buy.

The poncho is clear obviously, and doesn’t win any style points. However its function is to protect your phone when you are running in the rain. You are not meant to leave it on when you go to the pubs with your mates. I have a glass screen protector, and I was still able to use the phone through the poncho without any issues.

Performance

Once you find a comfortable tightness for your arm, the band stays there. I have had no issues with it slipping, even when pretty sweaty.

The phone case easily attaches to your arm band. It is a little fiddling to do initially but you so get used to the process.

Getting the phone off the arm band is really easy and quick, with the help of a little button on the mounting section.

The phone sits above the arm band, almost in thin air due the phone case and arm band attachment. It seemed a little odd to me to begin with. I just presumed it would feel weird and the phone would move about. However after a couple of minutes, I soon realised that the phone was secure and it felt comfortable on my arm.

My wife has an iPhone 7 plus, and I could image they might feel a little clunky on your arm but then I think they would feel like that on any type of arm band.

I have only used the poncho a couple of times, no doubt I will get more use of it out in the winter. It kept the phone dry and I could use the screen when needed. So that’s all you would need from it really.

Conclusion

A nice product with a literally good twist! Strong and sturdy, and looks good on your arm. I presumed I would just alternate between my normal case and switch to the quad lock case when I was running. However I found that I just kept the quad lock case on at all times. It looks good, and looks like it would provide some decent protection if you dropped your phone.

Their other range of mounts look good too, I wouldn’t mind trying out the car phone mount for when I am using my phone as a Sat Nav.

Performance Nut Butter

What is Performance Nut Butter

Performance Nut Butter is pretty self explanatory. It is a nut butter aimed at the fitness and performance market. Especially people who follow Ketogenic, LCHF, Paleo and Vegan Diets. People who are less likely to rely on gels and sugary sports drinks, so require real food alternatives for energy boosts.

Ingredients

This is pretty impressive, there are only 4 ingredients: Macadamia, Cashews, coconut and salt. You would think all nut butters would be like this, but just go and pick up a jar of peanut butter from a supermarket shelf. There is usually a frightening amount of ingredients and stabilizers. The 4 ingredients are all things that I consume on my version of the Ketogenic Diet. Although some strict advocates of Keto, do not eat Cashews as they are not really a true nut and they take a lot of processing to get to the shelf. However I do eat Cashews but just in moderation.

Here’s what the say on their website regarding why they chose the ingredients:

  • Monounsaturated Fat – The Macadamia Nuts and Cashews give this product the perfect amount of monounsaturated fats which help increase blood flow to the muscles and the brain and have a general anti-inflammatory effect on the body.
  • Oleic Acid – Found in Cashews and Macadamia Nuts it reduces blood pressure, increases fat burning to help with weight loss, protects cells from free radical damage, may prevent Type 2 Diabetes, and generates brain myelin (which is crucial to brain health). This is the fatty acid that makes olive oil so powerful.
  • Healthy Saturated Fats – Your body needs saturated fats. If you eliminate them from your diet, you will suffer serious health consequences. Coconuts and Macadamia Nuts contain healthy saturated fats which are necessary for a healthy body and healthy hormone production.
  • Natural Electrolytes – Every time one of your muscles contract or one of your neurons fire, your body is using it’s store of Sodium and Potassium (also known as salt). We added just a touch of the best sea salt we can find, which contains the perfect blend of Sodium and Potassium (salt) to keep your body firing on all cylinders.
  •  Vital Minerals – This product is specifically high in Selenium, Manganese, and Copper which help your body naturally produce energy, antioxidant enzymes, digestive enzymes and much more.
  •  Essential Vitamins – Performance Nut Butter is naturally high in B Vitamins like B1, B3 and B6. These vitamins help support brain function, healthy blood vessels and energy production.

Packaging

The nut butter will come in individual pouches, giving you a wider range of possible uses. For example you could take a pouch or two out on a long training run.

I have the jar version. So I have been using it like I would a jar of peanut butter.

I do like the design of the products, they look sharp and noticeable. If the products take off, they will be easy to identify amongst their competitors.

Taste

As I follow the Ketogenic Diet I am happy to see products like this on the market. It is made from real food, and is full of healthy fats. Therefore I am very likely to try and use products such as these in my training.

A good nut butter will provide me with energy and fuel in the areas I need it too. So the crucial aspect for me to become a repeat purchaser of such a product will be taste.

AND ……… Oh my days!!!

This is the best nut butter I have ever tasted. I am a fan of Peanut and Cashew Nut Butters. Even the cheap value brand ones. However this is next level nut butter. I love macadamia nuts, I like cashew nuts, I like coconuts, I consume and cook with coconut oil, and I put Himalayan pink salt on almost all my meals. So it comes as no surprise I would like this.

Some peanut butters for example are a bit dry and stick in your palate a bit. This nut butter is super creamy and moist, probably due to the macadamia and coconut. The texture is spot on, it looks like you would expect a nut butter too. Plus the texture and moisture is just right.

All in all, it is brilliant.

Usage

As mentioned, I have the jar version. So I have just being eating it in the house. Before I go for a run, I will eat a tablespoon of it on its own. I have also tried it with celery and carrot sticks too. It works in all situations really. I would guess it would be awesome on toast, but I do not eat bread anymore.

Conclusion

It this product was readily available in the UK, I would 100% percent buy the jars and I would definitely try the pouches on runs too.

I believe in wearing barefoot / minimalist footwear in all situations, especially when running. Here is why.

Who are Soft Star Shoes?

Softstar Shoes are a company that believe in making minimalist shoes that allow your feet to be happy and healthy. They make handcrafted shoes from their workshop in Oregon, USA. If you look on their website you will see they have a wide range of shoes, for a wide range of activities. I think their product range is unique and interesting. They also state they are a socially and environmentally responsible company, which I believe is important in these modern times.

What did they send me?

They sent me a pair of the Hawthorne Chukka Onyx.

This is what they say about them on their website:

Sizing

They clearly explain on the website how to measure your feet and how that measurement results in the size you need. I was right on the cusp of a 9u and a 10u. I emailed them and asked for their advice, and after I answered a couple of usage questions they recommended the 10u.

Delivery

These are the second pair of footwear I have received from Softstar Shoes and on both occasions they arrived promptly. This is especially impressive as all their shoes are handmade to order. Plus I would have faith that they would contact you if there were any expected delays.

Style

I love these. If you follow my blog you know I am a big fan of barefoot/minimalist running. So I have been looking into bringing my running preferences into my day to day life.

One of the main areas I needed a shoe for, was work. Here in the UK there is not a great choice of work or formal shoes made for the barefoot lifestyle. I have to wear trousers and a shirt to work, so I needed a shoe that looked good in an office setting.

These are perfect for that. They can easily pass as a work shoe. In fact I purposely didn’t mention them when I first started wearing them. No one noticed they were a “special/different” shoe.

This is not to say they are a boring shoe, they are not. I think they look great. What I mean is that a lot of people tend to have a preconceived negative stereotype on what a barefoot shoe would look like. For example maybe a little “geeky”, “frumpy” or “hippy”.

Fit

Their recommendation of going to the larger size was spot on. They fit perfectly. I could probably wear them without the laces and walk around as normal. Yet they feel roomy and light. Which is awesome.

The sole is thicker than I would require in my running shoes, however for work they are great. They are also still very supple, malleable and extremely comfortable.

Handmade

When I get a new pair of shoes I always give them a good looking over. To make sure the stitching is good, and the materials used look the required quality.

These shoes look immaculately made, and the leather is really soft to touch.

The laces used, also match the style of the shoe well.

Usage

I have worn these every work day for over a month now. They are comfortable and my feet love them. There are no signs of wear and tear. I fully expect these to last a very long time.

I have also worn them in more casual environments. Like going for walks, and to the pub. I wear a lot of different coloured Chino’s and these shoes are great with them all.

Conclusion

They are a great everyday shoe for almost all situations.

I have these and the Dash RunAmoc, and I am obsessed with both shoes. So it’s safe to say I am obsessed with Softstar Shoes in general.

SKINS Compression Clothing Brand Review

I have 4 items of SKINS Compression clothing, and I have got to say I love them all. They look great, and you can easily identify when other people are wearing SKINS too. This is due to their strong brand identity and design. However more importantly they fit awesomely, they are well made, and they stand up to a lot of punishment in different conditions. Oh and did I mention they look great? Oh yes I did sorry, but they do.

SKINS Essentials Unisex Compression Calf Tights MX Review

Skins kindly provided me with the calf tights, to provide an honest review. They have had no input in the review.

Who are SKINS

Skins is a compression focused sports clothing company. They believe their compression gear helps boost training, performance, and speed recovery. Here is some of their research, showing the benefits of compression clothing.

I originally found them on Instagram. I noticed how different their gear looks. It looks stylish, and bold. I then checked out their Facebook and Twitter accounts, which all looked great. I also like how they have different accounts for different countries. So I have followed all the Skins GB social media accounts.

About the Calf Tights

As I am a barefoot / minimalist runner, I can put a bit of stress and fatigue onto my calves while running. So I like to wear compression tights for my calves. As I am a big fan of the SKINS product range, it was a no brainer to wear calf tights from SKINS.

As SKINS state the calf tights are designed to support the whole lower leg and help prevent injury. This is exactly what I need in a calf tight.

I wear calf tights over calf socks because of the range of footwear I use. One day I could be in Vibram Fivefingers, the next I could be in running sandals.

Size Guide

The size guide is straight forward. You measure your calf at its biggest point, and see what size they recommend. I am a smidgen over 6 foot, and 13st2… yet quite embarrassingly I needed the extra small size haha.

Style

I went for the Black/Yellow ones. As these went with the Superpose Half Tights I have reviewed previously. They have a clean sharp look which I like, and are unmistakably noticeable as being a SKINS product. As with my other reviews, all I can say is hats off to the design team.

Fit

Again slightly embarrassingly the extra small fit me perfectly. You have to roll them up a bit and pull them on like you would a wet-suit I guess. They just feel well made and seem like they are made from good quality materials.

I have a quite a small calf, and it is high up on my leg. There is a big gap between my calf and my ankle. With this in mind, I was very happy that it hugged my leg all the way down. I have another brand of calf tight, and it was a little looser at the bottom than it should have been. No issues here though.

Test

I wear these calf tights on every run I do, training and races. So on average 3 times a week, since I got them in April. So they have been well used and washed on multiple occasions. I can find no noticeable signs of wear, or slackening of the compression. Very impressed.

Conclusion

Lets be honest, I do not know how much these have helped my running or injury record. However I feel more comfortable and relaxed knowing I have them on, so even if they just help me as a placebo then they are worth the money to me.

SKINS DNAmic Men’s Compression Superpose Half Tights

About the DNAmic Superpose Half Tights

When I was a youth, I used to wear cycling shorts under my football shorts. This was because I was attempting to keep warm, not because of the compression benefits. This is what you basically have here, high level compression cycling shorts combined with running shorts. Who would have thought that I as a lazy 12 year old Striker had a subconscious knowledge of the benefits of half tights!!!

As with all the compression leg products, they are designed to help you while you are participating in your sport or training but also improve your recovery time too. Two vital areas for me, in respect to my Marathon training.

Size Guide

As mentioned in my other reviews of Skins, they have an excellent size guide for their products. For the tights you go along until you find your weight, and up until you find your height. I was just on the medium scale, one more pound heavier and I would have been a large. I intend to lose weight before my marathon in October, so I was happy to go for a medium. Wise choice, they fit great.

Arrival

The tights arrived quickly, and in sufficient packaging. Nothing specific to add, everything went smoothly like you would expect from a premium brand.

Style

As mentioned probably due to my age, these remind me of the days when us fancy dan footballers would wear cycling shorts under our football shorts. Identifying us as the first ones to be kicked by the opposition. We were also the ones who probably wore coloured boots first too, again identifying us as the first ones to be kicked.

Anyway I digress.

As with all the Skins products. If you want some superpose half tights, then you would be hard pressed to find a more stylish pair. They have the classic Skins look, with there usual mix of logo’s. I love the Skins brand, and when I am at races you can spot other Skins wearers really easily and they always look sharp. I love the yellowy orange logo against the shiny black.

I would hypothesize the main benefit of the outer short is protecting your modesty. I don’t know why, but I think I would feel more shy in half tights than I do in the full tights. Sure I would get over it though, if I had a pair.

Fit

As with all Skins products they pull on tight, you have to wiggle and shake them on a bit. This I see as a sign of quality, if they weren’t tight they wouldn’t be very good compression tights would they. Seriously though they are tight but they are not uncomfortable. In fact they are very comfortable.

There are no drawstrings, there is just a waistband. The waistband is tight, and there is no way they would fall down. However they have never been overly tight.

The tights feel snug to your thighs and hamstrings, but you never feel constricted or sweaty. In fact when you take them off, I rarely have any noticeable signs of sweat. They have also never rolled up my leg.

Test

As with the compression top I have recently reviewed, I have used these in a few training situations. I have mainly used them as part of my race outfit, which has included two half marathons. I will also be wearing them in my first marathon in October.

The tights have been nothing short of excellent in every situation I have worn them in. I have had no complaints about how they are performed, and they also look great in my opinion. The only issue I have is the back pocket. It is very small, big enough for keys but nothing but else. Ideally I would have preferred that it would hold an iPhone. However this is pretty much an issue I find with all running shorts.

Conclusion

They look good, they feel good. That’s pretty much all I can say. I would highly recommend them.

SKINS Compression DNAmic Short Sleeved Top Men’s

Skins kindly provided me with the top, to provide an honest review. They have had no input in the review.

Who are SKINS

Skins is a compression focused sports clothing company. They believe their compression gear helps boost training, performance, and speed recovery. Here is some of their research, showing the benefits of compression clothing.

I originally found them on Instagram. I noticed how different their gear looks. It looks stylish, and bold. I then checked out their Facebook and Twitter accounts, which all looked great. I also like how they have different accounts for different countries. So I have followed all the Skins GB social media accounts.

About the DNAmic Short Sleeved Top

The compression top is said to provide support to your core, shoulders and biceps. Helping you maintain good posture and technique. It is also said to remove moisture to keep you dry.

Size Guide

Really straight forward. You just need to know your chest measurement. I wear Suits and Blazers regularly, so I know my measurement. I was right in the center of the chart for Large. So that is what I ordered.

Arrival

The top arrived quickly, and in sufficient packaging. Which was nice as I get wound up when I order something online which should fit through the letterbox. However it comes in a stupid amount of packaging, which means it gets left with a neighbour or I have to pick it up.

Style

I love the look of this top. The logo’s are clearly for Skins but they are subtle. The ridges and panels make it look cool, whilst being functional. In my opinion this is an excellent top visually. As with all the Skins products, a big thumbs up to the design team.

Fit

Even though it looks awesome in my opinion, it would be just a nice looking top if it didn’t fit correctly. After all the main reason for buying the top should be the compression benefits. Pulling the top on is a bit of a struggle, it is very tight. You almost have to shimmy it down your body. This is good though, as it is meant to be a compression top. Which is meant to support your body. If it was easy to pull on, that would suggest to me it wasn’t tight enough, or the quality of the product was below par.

Also I am no fitness model with washboard abs! So I was worried it might ride up a bit when running. Whilst is is unforgiving in showing off my love handles, it did not roll up at all and the fit remained excellent throughout all my runs.

Test

I have worn the top on the a few training runs to test it out. However due to the high quality of the top, I have wanted to save if as my “race top”. So far that has meant 2 half marathons, and I will wear it for my first marathon in October.

In the races mentioned, I have loved wearing the top. It is extremely comfortable, and supportive. I have a tendency to slouch my shoulders generally, but especially when I get tired in a run. When I slouch when wearing this top, you can feel the top pull across the top of your back. So it serves as a reminder to correct my posture, which is excellent.

It also does help keep you dry. I don’t mind wearing cheaper tops in training, but in races I will always want to wear a top like this. I ran both half marathons in pretty hot conditions to what I am used to, and the top kept noticeably dry. Until I started dosing my head in water that is.

Conclusion

A fantastic top, which I love. In fact the only negative I can link of has nothing to do with the top itself. It is down to your own self image and confidence. It is tight and it is white, so it shows off everything. So maybe get a darker colour if you think that could be a problem for you.

Run Nation Coquet Half Marathon – Race Review

Weekend

We travelled up to Northumberland on the Friday night after work. We decided to camp at The Railway Inn Campsite in Acklington. The campsite was a good choice as it was 4 miles away from the coast, and a half an hour drive to the race. They also had an onsite pub serving excellent food and local ales.

Day before the race

We spent the Saturday walking around Amble, and the beach at Almouth. I probably did a little more than I should have. However it was meant to be an enjoyable day for the wife and dog too, so I didn’t mind.

Race day breakfast

I did the race food fasted, so all I had pre race was one bottle of Cucumber and Lime KETONE.io by Limited Labs. All I had during the race was water, no gels or Gatorade for me.

Registration

The drive over to Rothbury was fine, and I used the post code provided by run nation. However when I got to the destination it did not look like a car park, then I saw people walking up a hill. So I drove up the hill and saw the registration sign. The staff there said I had the right place originally. The car park was down the side road I saw. The car park itself was pretty rustic lets say, however their was ample space which was good. The registration area was well sign posted, and there was plenty of facilities and staff around. The start line was apparently 500 meters away, but it seemed longer.

The Race

The race was on open roads, so you had to deal with traffic. Which I have never experienced before at an organised race. However the race was on similar country roads that I train on, so it wasn’t a problem. Plus there were plenty of signs, warning cars that pesky runners were about. The race was described as flat for the first half and undulating on the second half. This was underplaying it a little in my eyes. I would describe it as undulating and then pretty hilly. There were two hills of note that were very testing. That being said, the scenery was great. It is a really beautiful part of the county.

Once finished the medal and t-shirt were of good quality. Plus there was plenty of staff around, giving out water etc.

An enjoyable and well organised event.

Conclusion

Even though my time was 8 minutes slower than the Edinburgh Half Marathon, that was largely down to the routes. Edinburgh was very flat, and this was not!

I actually felt I ran this race better, and felt stronger.

Due to the area I train in which resembles the route a little, and perhaps helped by my diet I found that I was really strong on the up hills. Where I would pass a lot of people. However due to my barefoot/sandal running, I was a little inhibited on the downhill’s where I had to take it easy. Especially on the steep downhill’s.

I will rest for a week and move onto my marathon training.

I wore SKINS compression clothing and Shamma Sandals.
